Income taxes stink, and they started with the GOP...just say'n.

Stink'n Lincoln Log

The only stinky thing about this log is the garlic and chives, and nobody ever complains.

1 8 oz. goat cheese log
1/2 cup chopped roasted red peppers
1/4 cup chopped chives
2 cloves garlic
1/4 tsp. freshly ground black pepper
3/4 cup slivered almonds, toasted
Pita chips or crackers

Place goat cheese between 2 sheets of plastic wrap.  Roll out to an 8x6-inch rectangle.

Mix peppers, chives, garlic, and pepper.  Remove top sheet of plastic wrap and sprinkle pepper mixture evenly over goat cheese.  Starting from longer end, roll up using plastic wrap to aid in rolling.  

Roll log in almonds to coat.  Wrap in plastic and refrigerate 2 hours before serving with pita chips or crackers.

Extra Stink'n Lincoln Log:  Double the garlic!
