Best of Both Worlds Waldorf Salad

Sometimes the darndest things go so well together.


  • 3 large Granny Smith apples, cored, chopped
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 2 stalks celery (with leaves), peeled and sliced on the diagonal into 1/2-inch-thick pieces
  • 3/4 cup toasted pecan halves
  • 1/2 cup prepared mayonnaise
  • 2 tablespoons finely sliced fresh chives
  • 1 teaspoon sugar
  • 1/4 tsp. freshly ground black pepper
  • Several green or red lettuce leaves
Toss apples, lemon juice, celery, and walnuts in medium bowl.
In a small bowl, whisk together the mayonnaise, chives, parsley, sugar, lemon zest and pepper.  
Add mayonnaise mixture to apple mixture and toss gently to coat. Refrigerate if not using immediately. When ready to serve, arrange lettuce around edges of medium-size platter or bowl.  Spoon salad onto lettuce and serve.

Note:
This is NOT the way my mother made Waldorf Salad.  It wasn't until I was an adult that I became aware that many people prepare this WITHOUT Jell-O!
