¼ tsp. each
salt and freshly ground pepper
1 jalapeno pepper, seeded and minced
5 oz. (7 cups)
arugula leaves
1 romaine heart,
chopped (5 cups)
2 shallots, thinly
sliced
3 cups seedless
watermelon chunks (1-inch chunks)
1/2 cup coarsely chopped cilantro leaves
1/2 cup coarsely chopped cilantro leaves
4 oz. queso fresco, crumbled
Whisk together
vinegar, oil, salt, pepper and jalapeno.
Combine arugula,
romaine, shallots, watermelon, cilantro and queso fresco in salad bowl.
Toss gently with dressing.
