Surprise, surprise...he's one of Romney's biggest bundlers!


Barclay Bundler Baby Spinach Salad with Creamy Goat Cheese Dressing
Makes 4 servings


Gather up some good ingredients and create something delicious.

2 Tbsp. plain Greek yogurt
2 Tbsp. milk
2 Tbsp. mayonnaise
1 clove minced garlic
1 tsp. Dijon mustard
1 tsp. white wine vinegar
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1/4 cup crumbled goat cheese
6 cups baby spinach leaves
1/3 cup red onion wedges
2 hard cooked eggs, sliced
2 plum tomatoes, cut into wedges


In medium bowl whisk yogurt, milk, mayonnaise, garlic, mustard, vinegar, salt and pepper.  Stir in goat cheese.


Arrange spinach, onion, eggs and tomatoes on platter.  Serve with dressing.
