FIX THE CODE Mother Lode Bars
Makes 24 bar cookies
A bar cookie with many layers, much like the current tax code. Unlike current tax laws, you will love these!
1 pkg. (16.5 oz.) refrigerated
sugar cookie dough
2 sticks butter,
softened
1-1/4 cups
granulated sugar, divided
3/4 cup packed brown
sugar
3 eggs, divided
2 tsp. vanilla
2-1/2 cups flour
1-1/2 tsp. baking
soda
1/2 tsp. salt
1/2 cup cocoa
powder
12 oz. chocolate
chunks, divided
3/4 cup chopped pecans
3/4 cup chopped pecans
1 cup peanut butter
2 squares
semi-sweet baking chocolate
Heat oven to 350°F. Line 9x13-inch baking pan with foil; spray
with nonstick cooking spray.
Press sugar cookie
dough evenly into bottom of pan; set aside.
Beat butter, ¾ cup
granulated sugar and brown sugar in large bowl 2 minutes or until light and fluffy. Beat in 2 eggs and vanilla. Remove half of the mixture and place in separate large bowl.
In another large bowl mix
together flour, soda and salt. Remove
half of the dry ingredients and place in separate bowl. Add cocoa powder and half of the chocolate chunks to first bowl, and nuts and remaining chocolate chunks to the other, stirring until well combined. Beat 1
bowl of dry ingredients into each bowl of butter-sugar-egg mixture, creating a chocolate chip dough with nuts and a chocolate-chocolate chip dough. Spoon chocolate-chocolate chip dough over sugar cookie
dough, pressing gently to create an even layer.
Set aside chocolate chip cookie dough with nuts.
Beat together
remaining 1/2 cup sugar, egg and peanut butter.
Spoon over chocolate dough, pressing evenly into pan. Top with chocolate chip cookie dough with nuts.
Bake 45 minutes or until golden brown and center is set
but slightly soft. Cool completely.
Tip:
Get out a bunch of bowls before you begin, and read the fourth step carefully!
