Slow Simmered Salmon
Although the primary season is moving along slowly, this healthy
weeknight dinner will be ready in minutes.
1 Tbsp. olive oil
3 cloves garlic, minced
1 can diced tomatoes
1 lb. salmon filets
¼ tsp. Kosher salt
1/4 tsp. freshly ground black pepper
Lemon wedges
Heat oil in large skillet.
Add garlic; cook and stir 1 minute or until fragrant (do not brown. Add tomatoes.
Bring to a simmer.
Add salmon, skin side down. Season
with salt and pepper. Cover skillet and
cook on medium heat 6 to 8 min. or until desired doneness. Squeeze lemon over fish.
