Presidential Hopeful Pretzels


Mitt's favorite junk food is really good pretzels (and Peanut M&M's).  This one's for you, Mitt!

Dough
2-1/2 cups bread flour
2 tsp. yeast
1/2 tsp. Kosher salt (plus more for sprinkling)
3/4 cup water
2 Tbsp. butter, melted
1 tsp. honey

4 cups hot water
½ cup baking soda


1 egg, beaten

Add flour, yeast and salt in bowl of food processor; pulse to combine.  Mix water, butter, honey and yeast.  With motor running, add liquid ingredients to dry ingredients and process 1 to 1-1/2 minutes (dough will form a ball). Remove dough from processor, knead one or two times on counter and place in greased bowl covered with a towel.  Let stand 1 hour or until doubled.  

Heat oven to 450°F.

Knead dough a couple times on clean work surface, then divide into 8 equal pieces.  Roll each dough piece into a long rope (16"), then twist ropes into pretzel shapes. Dip pretzels into combined water and baking soda, then place on a greased baking sheet.  Brush pretzels with beaten egg, and sprinkle with salt, if desired.

Bake 8 to 10 minutes or until golden brown.  

Tips:
Serve warm with coarse brown mustard.
This is relatively healthy for "junk food".  You can also make these using half white bread flour and half whole wheat bread flour, substituting margarine or olive oil for the butter, and omitting the salt sprinkles.
