Almost Over (?) Oatmeal Cookies
Two dozen cookies
Toasted pistachios and dried cherries make these cookies sufficiently delicious!
3/4 cup flour
1/4 tsp. each salt, baking
powder
1/2 cup (1 stick)
butter, softened
1/2 cup each granulated sugar,
packed brown sugar
1 egg
1-1/2 cups old
fashioned oats
1/2 cup toasted
finely chopped pistachio nuts
3/4 cup dried
cherries
Heat oven to 325°F.
Combine flour, baking powder and salt in small bowl; set aside.
Beat butter and sugars in medium bowl with electric mixer 2
minutes or until light and fluffy. Beat
in egg. Add flour mixture and beat until
blended. On low speed blend in oats,
nuts and cherries.
Use 2 Tbsp. size cookie scoop to portion cookies on
parchment lined baking sheets. Flatten
cookies with glass dipped in sugar.
Bake
18 to 20 minutes or until lightly browned.
Transfer cookies to cooling rack using metal spatula.
Tip:
Substitute raisins or chopped pitted dates for dried cherries.
